As a sustainable, non-GMO vegetable resource with no major allergen concerns, pea protein is well situated to meet growing consumer demands.  Due to its wide-ranging acceptance and compatibility with increasing regulatory restrictions, pea protein is rapidly gaining acceptance for use in food, beverage, nutraceutical, probiotic and fermentation applications. 

Roquette has developed Nutralys™ S85F pea protein and Nutralys Pea HF (exp.) specifically as nitrogen sources for fermentation applications. In this presentation, we evaluated Nutralys Pea HF (exp.) on probiotic applications with Bifidobacterium animalis, Lactobacillus delbrueckii and Streptococcus salivarium for cells growth and viability measured by serial dilutions and colony counting. Nutralys Pea HF (exp.) has been compared to benchmark ingredients such as soy peptone, casein peptone, pea peptone, yeast extract and Solulys. 

The studies demonstrated a compatible cell growth and viability of probiotics with Nutralys Pea HF (exp.) compare to the most commercial benchmarks, indicating that Nutralys Pea HF (exp.) can be an excellent nitrogen source alternative for probiotic fermentation applications.
