Fast Ethanol Fermentation Process in Three Million Liters Fermenters

Brazil ethanol fermentation process in mainly a batch, yeast recycling system, which allows a fast, 8-10h fermentation with 8-10% (v/v) ethanol in the fermented mash.
With the increasing daily plant capacity, the fermenters increased in size, and many problems arose. It will be shown the advantages and constrains in the scaled up, and ways to overcome some of them, as fermenters shape, foam production and contamination problems.
