This research is aimed to determine the antimicrobial property of chitosan-based film incorporated with cinnamaldehyde. The films were prepared using 95% degree of deacetylated chitosan and plasticized using 40 %w/w of sorbitol /chitosan powder. Cinnamaldehyde was incorporated into chitosan film-forming solution at different concentrations (50, 100 and 150 µl/g of chitosan powder). The chitosan film solution was casted, dried, and conditioned at 25 C and 50 % RH. Antimicrobial property of chitosan film containing cinnamaldyhyde was tested against target microorganisms (Staphylococus aureus, Bacillus lichenformis, Bacillus subtilis, Escherichia coli, Pseudomonas aeruginosa and Shewanella putrefaciens). The film was found to have small inhibition zone against S. aureus while inhibited other target microorganisms on the contact surface.
