Production of Engineered Glycerides using Lipase

Lipid materials were structurally modified using various lipid catalytic and/or synthetic enzymes in organic solvents. Several structured lipids such as human milk fat analogue, medium chain fatty acid triglycerides, and enantiomeric fatty ester flavoring compounds were synthesized by enzymatic interesterification of glycerol and fatty acids. Enzymatic interesterification reaction conditions were partly optimized. Production profile of mono- and di-glyceride by glycerolysis of glycerol and triglyceride using a 1,3-specific lipase was also characterized by response surface methodology (RSM). Glycerolysis was carried out under several conditions. Higher reaction rate of diacylglycerol production was observed in solvent system than in solvent-free system, even though the conditions for maximum diglyceride production in solvent system were not significantly different form that in solvent-free system.
