Microstracture changes and micro- damage behavior of probiotic bacteria under the impact of heat, cold and ultrasound shock have been studied by optical microscope, scanning electron microscope (SEM) and transmission electron microscope (TEM) the results were showed that after treatment probiotic, with ultrasound shock, a large number of coccus probiotic were alive, but bacillus probiotic were most decline, Three kinds of micro damages are usually produced by ultrasound impacts, micro-cracks, micro-voids and rapture and when the impact of ultrasound is higher micro-cracks and rapture is higher. treatment probiotic bacteria with thermal shock has not any significant effects on micro structure and permeability properties of cell wall probiotic bacteria. Micro structural of cell wall by TEM in probiotics bacteria were showed enzymatic activity such as β-galactosidas activity that could aid in the degradation of lactose in milk probably after treatment with thermal and non thermal shock was in creased.
