The objective of this presentation is to give an introduction of protein hydrolysates, generic manufacturing overview with an emphasis on enzymes, unit operations and manufacturing trends.   The analytical tools used in characterization of protein hydrolysates will be highlighted and how some of these techniques can be used to determine the consistency and/or identifying the source of problems. 

Protein hydrolysates are an excellent nutritional source providing di, tri and oligo peptides, amino acids and growth factors to the microbial, animal and insect cells. Few examples in screening of protein hydrolysates for industrial media formulations will be described and the presentation will be concluded with examples of protein hydrolysates as media additives in industrial fermentations to increase productivities.
